July 17th, 2009 - 'High Tea' Bridal Party at Timmeron

Hi Chris and Christina,
Just wanted to say what a wonderful afternoon tea we had for the bridesmaids and ladies!  It was a perfect occasion while the men played golf.  The different teas were displayed so beautifully and gave everyone a sense of an English tea party!  Fresh flowers, white cloths and bright colored napkins gave a special touch. The menu was perfect for the afternoon and very yummy!  Christina, thanks for knowing what I had invisioned for this party -- you knew exactly what I had in mind!  Thanks for the picture.
Blessings, Janet Cooley

May 30th ~ Lake Austin Wedding ~ Aparna & Ken

As the co-ordinator of the catering, I chose and pushed for Timmeron based on the fact that I was getting the actual chef to arrive at my party and I felt the menu was unique and accommodating.  I have to add that the website was inviting (FIRST IMPRESSION), and the follow-up and continued involvement with the event coordinator made me feel very confident in the company.  In fact, the coordinator (Christina) was there every step of the way!  I had one single contact-person from the estimate to dessert and (oh thank goodness) she was amazing! I felt so comfortable leaving even the slightest details with her and the event was perfect. ( Even for an ENGINEER bride!!!!) micromanager is a better word.

Guys: as a group you were wonderful.  one of the things I especialy appreciated was how each and every one of you was in the job 100%.  Your assistant Kayleigh was so organized and working so hard.  To me, that makes you all a true team.  OF course, if you all were not working as a team, the job would not have been so successful.  NO complaints on such a small job and a very tough location!  Bravo!

May 24th, 2009 ~ 50th Wedding Anniversary Wimberley

Chef Christopher and Christina,
We really appreciate the fine job of catering you did for our 50th wedding anniversary party—it
truly exceeded our expectations. Many of our guests remarked about how wonderful the food was and how appealing the presentation was—the appetizer tables were especially attractive and well done. The golden “50th” on the cupcakes was a special treat.

Your hard work and effort were very evident and we want to say thank you for a job well done. Our daughter and son-in-law from Naples, Florida, were pleasantly surprised that a town the size of Wimberley would have the catering capability which you provide.

Thank you so much, Rosalie & Dallas

February 7th, 2009 - Paige & Zach's Wedding at Red Corral Ranch

My husband and I planned our wedding in 5 months from our current home over 2500 miles from Wimberley, TX.  I cannot count the number of times I was told by friends and family how difficult and stressful it would be...not so.  I heard at least once a day that I was the most non-stressed bride ever--my secret?  Awesome vendors like Chef Christopher and Christina!

Throughout the whole process Christina made everything so incredibly easy--happily drafting multiple menus until we got it right, advising on glassware, china, and cutlery rentals (and saving us quite a few dollars in the process), and even swooping in with less than two weeks to go to line up a bartender for our rehearsal dinner--which was catered by someone else!

Then there's the food--my goodness--so delicious.  Everyone told me I wouldn't eat at my own reception, but there was no way I was going to miss out on what more than a handful of my guests touted as "the best food we've ever had a wedding...ever."  Through it all, Chef Christopher and Christina were gracious and unbelievably considerate, not just of us, but of every single guest.

Even with the chaos that comes with cooking for and serving 200 people, Christina still found time to be creative when my husband requested chocolate milk for our favorite "wee" guest (chocolate cake mixed with milk--yum), and Chef Christopher took the time to walk a lactose intolerant guest through her choices, even going as far as suggesting the best pairings.  Sara, gushed later, "I can't remember the last time I got to eat more than fruit or dry rolls at a wedding...I didn't even feel like I was missing out on anything because all of my choices were so delicious!"

We cannot thank you enough for making all of us feel special, for feeding us your amazing bounty, and for making it seem effortless on our big day.  Thank you, Chef Christopher and Christina.

PS-Writing this is making me crave those stuffed dates--2 months later.

Paige

September 27th, 2008  - Alison & Alan' Wedding
Chris & Christina, thanks so much for your good work at Alan & Alison's wedding at The Red
Corral Ranch in September.  We had so many great comments about the food; all of it!  From the wonderful pork and beef carving stations to the tasty fish and appetizers and cold soup.  Beyond the great food I want to thank you for your great service.  We all felt very taken care of and it is with surprising pleasure that I can say that attending my daughter's wedding was stress free and let our family enjoy the special moment where those kids made one of the biggest promises anyone can make.  The teamwork between theplanner, baker, florist, ranch personnel, photographer, band and you the caterer was wonderful.
Kind Regards,
Jody de Jong

September 19th - Southwestern Cooking Class at Timmeron
Christina and Chris, I just wanted to let you all know that I had such a wonderful time at the
class!  It was a wonderful evening, and I learned alot.  I have not had a chance to make anything from the class, but plan on recreating the entire meal at my mother's for Thanksgiving week!  I have recommended Timmeron classes to all my friends. Eric Gerber

August 10th, Private Birthday Celebration Cooking Class
It was wonderful!  Michael was thrilled with his "surprise party".  The tomato bisque was his favorite and James and Paul gave him a smoker the next day for his birthday so he can try to duplicate it!  It was my favorite too, so I guess I need a smoker also!  We all learned a lot and really enjoyed Chef Christopher's fun approach to food and teaching his art.  Michael described him to his Grandmother as having a "commanding presence" as well as fun and being a "real chef".  So, thank you both for making his birthday so special.  It will certainly be one he will never forget!

August 11th - From the newlyweds - Adrianne & DJ!
Chef Christopher & Christina, we just wanted to let you both know how much we enjoyed your food, charm and assitance with helping make our wedding very special. Thanks for everything.

July 26th - Adrianne & DJ's Wedding - Red Corral Ranch
Christina:

Just got my family off to the airport and wanted to write and tell you again how very much we enjoyed the entire weekend. And your part in making it such a success was huge and I'm grateful for all you and Chef Christopher did.

I soooo wish I had taken the time to sit down and eat because everyone raved about the menu! Apparently, there was not a weak dish among the many you served because each guest that commented seemed to mention all of them. I so hope I will have the opportunity to attend another event that you are catering so I can know first-hand the wonderful flavors I was hearing about.

And, I also was so pleased with the bar set-up down at the Pavilion. I know that was sort of a last minute idea but it seemed to work perfectly and the visual display could not have been more Texas 'hill country' or more appealing. Thank you for making that come together extremely well and addressing the time-lapse in scheduling between the two events.

I appreciate your, Kimberley's and Ruth Ann's holding of my hand throughout the planning process. None of this could have happened without all your expertise because I certainly did not know what I was doing. Thank you, thank you, thank you!

I know the bride and groom were quite thrilled with it all as well. When they get back home, I look forward to reviewing every detail of the event and reliving every fun moment that you helped to create.

My very best wishes for much continued success!!

Linda Richardson (mother of the bride)

June 28th
- Trish & Mark's Wedding at Red Corral Ranch
Christina & Christopher,
Thank you so much for all your hard work in preparing a most fabulous feast
for our wedding this weekend.  EVERYONE was so pleased and impressed....and
delightfully surprised.  Many said it was the "best food at a wedding we've
ever had!".  I kept getting stopped and didn't get to really taste
everything but what I did have was wonderful...what stood out, first of all
were the pates...YUMMM!  Perfect!  Also, the Red Snapper was just delicious
and so very fresh.  The shrimp were amazing...everyone thought so.  I hear
the roasted tomatoes in the salad were terrific but I never got one!

Thank you for "going all out" and we appreciated all the time and effort you
put into this very wonderful and beautiful meal.

Sincerely, Trish Bales

Chris & Christina, Thank you so very much to the both of you for making Alexandra's party such a very special event.  You were both so very sweet and the attention to detail amazing.  I just wish we could do it all over again- the time went by much to quickly.  I certainly appreciate the concessions you made on my behalf to enable me to have such a lavish party on my shoestring budget for my daughter.
Everyone was impressed and thought the food absolutely delicious!!!
And the cake - wow!!!

Sarah Harkinson - October 27th, 2007 - Wedding at Red Corral Ranch
Our wedding was as close to perfect as one can get!!! Everyone loved the food and raved all weekend about the dove, marinated pork, and --especially-- the delicious chocolate cake. We finished the last bites yesterday and it was still moist! When Rinku (the bride) says it is the best wedding she has ever tasted, you know it was perfect! We talked to Josh and Rinku last night and they were thrilled with the entire evening. Everything
looked beautiful and we all loved the dancing and GREAT food.

As reported by Elena Tucker, The Boerne Star staff writer in the Tuesday, September 18th issue.
Kiss the Cook, kitchen specialty store, hosted its first cooking class in a newly finished teaching kitchen just off Main Stree behind the Bear Moon Bakery.

Christopher Stonesifer, well-known Hill Country teacher-chef, led 16 students through a savory practicum of “Santa Fe Southwest Cuisine,” a menu touting black bean soup, roasted garlic flan, salmon tamales, mesquite-roasted ratatouille and almond cream cheese pound cake with chantilly crème.

“You know, people are sick of fast food,” said Stonesifer. “They're tired of eating this greasy, giant-portion, overpriced food. And people - it's a beautiful thing - they're going back to their home tables where they can talk to their kids, where they can make wholesome food.” More from the Boerne Star . . .

September 2007- KSEV 700AM Blinda James -  Thank you for all you do for our show! You have added a great flare to the show! Wedding July 21, 2007
Christopher & Christina,
Greg and I could not have been happier with you and your services.  We were blown away by how professional you and your staff are.  The comments on the food served was overwhelming to say the least.  One of my friends from Houston attended the wedding.  She entertains folks like Phil Garner, the Astros manager, at catered get togethers and only hires the best caterers in Houston.  She commented that the food was better than any of her catered affairs.  Now, how is that for a compliment?

Thank you again and just know that we will refer you to our friends having catered affairs in your area.

Tuscany Culinary Retreat June 18th - 20th, 2007 - I wanted to e-mail you guys and tell you what a wonderful time we all had at the cooking class. The food, menus, fellowship and accommodations were all fabulous!!!!!!!!!!!!!!! We girls had such a good time. We all loved the Red Corral Ranch. Dr. James was such an interesting and fun person to get to know.   I failed to mention to you how nice all the table settings were for each meal. That special touch of yours made eating the wonderful food we prepared even better!!!!! It was so fun being with you!!!!!!!!!!!!!! Rita Cox, Atlanta Texas

WEDDING May 19th, 2007 - Absolute Perfection from the Hill Country Chef and His Entourage! I've never had more fun at any party I either hosted or attended and it's in very large part to the great work you all did. We get thank you notes every day & they all mention the food.. Jane Moser

Chris, your class was a breath of fresh air in my cooking life! It was practical and fun, but taught one so much about herbs and techniques that will influence how I cook from now on. Thanks for sharing your vast knowledge with us. We enjoyed your stories and your style. It was a very memorable 27th wedding anniversary. Dan & Jan Bates, The Woodlands, TX

Thank you Chris and Christina for a job well done. We and our guests were delighted with the food and the service you provided for the Grand Opening of Wimberely Glass Works on Oct. 14, 2006. The chicken skewers were especially delightful and the aoli was to die for. Having you serve and clear was an unbelievable help as well. With at least 600 guests, we couldn't have done it without you. We look forward to working with you again. Thanks again. Tim DeJong

Christopher, interesting you should ask for a reflection - Here is what I wrote this morning after breakfast, reflecting on yesterday & this morning's "cooking demonstration": "Have just returned from our breakfast demo and meal. Yesterday we drove down from Austin and began preparing tonight's dinner. The menu is a feast for a gourmand. We've learned so much in such a short period of time - I look forward to trying some of the techniques on our own. . . And we have learned so much. Truly incredible - you are. Talented. Accessible and Authentic. This has been informative, but more important memorable. Divine combination of texture, color, taste and flavor - Pure genius - Thank you for sharing your gift. Karen & Patrick

Thank you for showing us the joy of making homemade pizza! You make cooking such a pleasure! Dotty Collins

The evening was such a delight! Such delicious food - It was fun watching and learning! Thank you! Claire & David Kopp
